‘Pop up’ Chefs in Madrid

The Table by, the pop-up restaurant of Urso Hotel & Spa is bringing to the capital six of Spanish best chefs. Six different restaurants from different places of our geography are being placed in the capital for six weeks each one since 1st October.
“Spain’s first revolving-chef restaurant opened last year in Madrid’s Hotel URSO, with menu and décor changing every few weeks. The seasonal venture, open September-June, brings in chefs and their teams from across the country, offering acclaimed restaurants elsewhere access to a capital-city audience”.
Diego Fernández of Restaurant Regueiro will travel to the capital with one of his best well-known dishes: Iberian ham croquettes—elected as the best croquettes in Spain in last Madrid Fusion Congress.
“In November and December will be the turn of one of the greatest promising talents, already real, of Majorcan Cuisine: Andreu Genestra. Trained in Mugaritz and Arzak, he is currently running the Michelin-starred restaurant called after him in Hotel Rural Predi Son Jaumell, in Capdepera (Mallorca). One of his strengths is a garden of 6.000 square meters providing self supplying with Mediterranean vegetables and a great variety of Majorcan spices”.

Then, Javier Olleros of Culler de Pau (Reboredo, Pontevedra), Begoña Rodrigo of La Salita (Valencia), Oriol Ivern of Hisop (Barcelona) and finally, Xanty Elías of Acánthum, the first gastronomic restaurant in the province of Huelva.
